I’d eat it, as long as it met some strict criteria: smell and feel. Go ahead and open it, check to see if it smells at all off and if there’s any hint of slime on it. This is different than the normal wet/fatty feel of raw bacon. If it doesn’t smell like anything but bacon and it doesn’t have a slimy feel, then it’s all good I’d say.
Note: I wrote a food column for a local magazine, but I am not a food specialist nor am I scientist. If you decide to eat the bacon, you do so at your own risk. But seriously, if it’s not been opened, I’m betting it’s fine.
